A creamy and velvety coconut pudding that transports you to a tropical paradise.

Ingredients

  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 cup toasted coconut (for topping)

Instructions

  1. Combine the coconut milk, sugar, cornstarch, and salt in a saucepan. Whisk until smooth.
  2. Add the milk gradually while whisking to prevent lumps.
  3. Cook the mixture over medium heat, stirring constantly until it thickens and begins to boil, about 5-8 minutes.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the pudding into serving dishes and allow it to cool. Refrigerate until set, about 2 hours.
  6. Top with toasted coconut before serving. Enjoy chilled!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving.
