A comforting and vibrant lemon-infused chicken soup, perfect for chilly days.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup rice
  • 6 cups chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened.
  2. Add the chicken broth and bring to a boil.
  3. Stir in the rice and reduce the heat to a simmer. Cook until the rice is tender, about 15 minutes.
  4. Add the cooked, shredded chicken and lemon juice. Season with salt and pepper.
  5. Simmer for an additional 5 minutes, then serve hot, garnished with fresh parsley.

Notes

To save time, use rotisserie chicken. Use fresh lemon juice for best flavor. Consider adding spinach or peas for more veggies.
