A vibrant and fresh dish featuring marinated steak, lime, and colorful toppings.

Ingredients

  • 1 flank steak
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1/4 cup chopped cilantro
  • 3 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 cup halved cherry tomatoes
  • 1 avocado, sliced
  • Feta cheese, crumbled (optional)

Instructions

  1. Whisk together the lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper.
  2. Marinate the flank steak in the marinade for at least 30 minutes.
  3. Cook the rice according to package directions.
  4. Heat the black beans in a small saucepan for about 5 minutes.
  5. Sauté the corn until tender.
  6. Preheat the grill to medium-high heat.
  7. Grill the steak for 4-5 minutes per side until medium-rare.
  8. Slice the steak thinly against the grain.
  9. Assemble the bowls with rice, beans, corn, tomatoes, avocado, and sliced steak.
  10. Garnish with extra cilantro and lime wedges.

Notes

For a beefier flavor, marinate the steak overnight. To simplify, use pre-cooked rice.
