A flavorful and easy Cilantro Lime Chicken recipe perfect for weeknight dinners or weekend gatherings.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Whisk the marinade: In a bowl, whisk together lime juice, cilantro, olive oil, garlic, cumin, salt, and pepper until well combined.
  2. Marinate the chicken: Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag, removing as much air as possible, and marinate in the refrigerator for at least 1 hour, or overnight for the best flavor.
  3. Preheat the grill: Ready your grill by preheating it to medium-high heat.
  4. Grill the chicken: Remove chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side or until fully cooked, with an internal temperature of 165°F.
  5. Let it rest: Once done, let the chicken rest for a few minutes before slicing and serving.

Notes

Marinating overnight enhances the flavors significantly. You can use chicken thighs instead of breasts or bake the chicken in the oven at 400°F for about 25 minutes.
