  • 8 oz cream cheese (softened)
  • 1/3 cup sugar (Adjust to taste)
  • 1 teaspoon vanilla (Use pure vanilla extract)
  • 1/2 cup whipping cream (whipped)
  • 2 oz semi-sweet chocolate squares (Can substitute with dark chocolate)
  • 3 tablespoons butter or margarine (Helps in melting chocolate)

Instructions

  1. Prepare the Raspberry Layer: In a medium saucepan, combine the raspberries, 6 tablespoons of sugar, and cornstarch. Stir gently over medium heat until the mixture starts to bubble and thicken slightly, around 5-7 minutes.
  2. Cool the Raspberry Mixture: Once thickened, remove from heat and let it cool completely.
  3. Make the Chocolate Cream Cheese Filling: In a large mixing bowl, beat the softened cream cheese with 1/3 cup sugar and vanilla until smooth.
  4. Fold in the Whipped Cream: Gently fold the whipped cream into the cream cheese mixture.
  5. Melt the Chocolate: In a small saucepan, melt the semi-sweet chocolate with the butter over low heat until smooth. Allow it to cool for a few minutes.
  6. Combine and Layer: Pour the melted chocolate into the cream cheese mixture and fold until uniform. Layer this filling into your prepared pie shell, followed by the cooled raspberry mixture.
  7. Chill the Pie: Cover the pie with plastic wrap and refrigerate for at least 120 minutes, or until set.
  8. Garnish and Serve: Whip remaining cream and dollop it on top before serving, garnishing with fresh raspberries.
