A decadent Chocolate Mousse Cake featuring a rich fudgy base topped with a fluffy mousse and glossy ganache.

Ingredients

  • ½ cup all-purpose flour
  • â…“ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 8 oz semi-sweet chocolate, chopped
  • 1 ½ cups heavy cream, divided
  • 1 teaspoon unflavored gelatin
  • 1 tablespoon water
  • ½ cup heavy cream
  • 4 oz semi-sweet chocolate, finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan with parchment paper.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt.
  3. Whisk the eggs and granulated sugar until the mixture becomes light and fluffy, about 3-5 minutes.
  4. Gently add the melted butter and vanilla extract to the egg mixture and whisk until combined.
  5. Fold the dry mixture into the wet ingredients until just combined.
  6. Pour the batter into the prepared pan and bake for 12-15 minutes, or until a toothpick comes out clean. Allow cooling.
  7. Bloom the gelatin by sprinkling it over the water in a small bowl for about 5 minutes.
  8. Melt the chopped semi-sweet chocolate with ½ cup of heavy cream until smooth.
  9. Microwave the bloomed gelatin to dissolve and stir into the melted chocolate.
  10. Whip 1 cup of remaining heavy cream to soft peaks.
  11. Gently fold the whipped cream into the chocolate mixture until well combined.
  12. Spread the mousse over the cooled cake base and refrigerate for 2 hours.
  13. Heat the remaining ½ cup heavy cream until simmering, then pour it over the finely chopped chocolate and stir until smooth for the ganache.
  14. Once cooled, pour the ganache over the mousse layer and refrigerate for another hour.
  15. Run a warm knife around the edges before removing the springform ring. Slice and serve chilled.

Notes

Pair with fresh berries or ice cream for an extra treat. Store leftovers in an airtight container for 3-4 days.
