A warm and comforting chickpea curry infused with coconut milk and spices, perfect for a cozy meal.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the curry powder and turmeric, cooking for an additional minute to release their flavors.
  5. Mix in the chickpeas and coconut milk, bringing the mixture to a simmer.
  6. Reduce the heat and let it cook for 15-20 minutes, allowing the flavors to meld together.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro before serving.
