A warm, gooey Chicken Quesadilla loaded with shredded chicken, melted cheese, and sautéed vegetables, perfect for any meal.

Ingredients

  • 2 tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup cheese (cheddar or mozzarella)
  • 1/2 cup bell peppers, chopped
  • 1/4 cup onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Toppings (sour cream, salsa, guacamole)

Instructions

  1. Heat the skillet by heating the olive oil in a skillet over medium heat.
  2. Add the chopped onions and bell peppers to the skillet and sauté until softened.
  3. Place one tortilla in the skillet to begin making the quesadilla.
  4. Layer on one half of the tortilla with shredded chicken, cheese, and sautéed veggies.
  5. Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown, about 3-4 minutes per side.
  6. Remove the quesadilla from the skillet, slice into wedges, and serve with your favorite toppings.
