A simple yet elegant dish featuring chicken breasts cooked in a buttery lemon sauce with capers.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt
  • Black pepper
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper. Then, dredge them in flour, making sure each piece is well coated.
  2. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  3. Add the floured chicken to the skillet, cooking for about 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and place it on a plate to rest.
  5. Add the chicken broth and lemon juice to the same skillet, scraping the bottom to release the browned bits.
  6. Stir in the capers and the remaining tablespoon of butter.
  7. Return the chicken to the skillet, cooking with the sauce for another minute.
  8. Serve garnished with freshly chopped parsley.

Notes

For extra lemon flavor, zest the lemons before juicing. Adjust the capers based on your taste preference.
