  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper, to taste
  • 4 slices provolone cheese
  • 4 hoagie rolls

Instructions

  1. Heat the skillet: Start by heating the olive oil in a skillet over medium heat until it shimmers.
  2. Sauté the chicken: Add the sliced chicken to the skillet, season with salt and pepper, and cook until browned and cooked through—about 5-7 minutes.
  3. Add the vegetables: Toss in the sliced bell pepper and onion, and cook until tender—around 3-4 minutes more.
  4. Melt the cheese: Remove from heat, lay provolone slices over the mixture, cover, and let sit until melted.
  5. Assemble the sandwiches: Fill each hoagie roll with the cheesy chicken and vegetable mixture and serve immediately.
