  • 6 to 8 pieces thin-sliced chicken breasts
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 1/2 cups buttermilk
  • 1 large egg
  • Vegetable or canola oil for frying
  • 1/4 cup reserved oil from frying the chicken
  • 1/3 cup all-purpose flour for gravy
  • 2 cups milk for gravy
  • Salt and pepper for gravy

Instructions

  1. Pound the chicken breasts to an even thickness of about 1/2 inch.
  2. In one bowl, combine flour, baking powder, baking soda, salt, black pepper, and garlic powder.
  3. Whisk together buttermilk and egg in another bowl.
  4. Dip each chicken breast in the buttermilk mixture, then dredge in the seasoned flour.
  5. Heat oil in a skillet to 350°F.
  6. Fry the chicken for 3-4 minutes per side until golden brown.
  7. Transfer the fried chicken to a plate lined with paper towels.
  8. Pour off all but 1/4 cup of oil from the skillet.
  9. Whisk in flour to reserved oil and cook until deep golden.
  10. Slowly add milk while whisking vigorously.
  11. Cook the gravy until thickened, about 5 minutes, seasoning with salt and pepper to taste.

Notes

Serve with mashed potatoes or cornbread. Store leftovers in an airtight container for up to 3-4 days.
