A quick and satisfying bowl of Chicken Burrito Bowls filled with rice, chicken, and fresh toppings.

Ingredients

  • 2 cups cooked rice
  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips (optional)

Instructions

  1. Cook the rice according to package instructions.
  2. Season the chicken breasts with cumin, chili powder, salt, and pepper, then grill or sauté until fully cooked, about 6-7 minutes per side.
  3. Mix together the cooked rice, black beans, corn, diced tomatoes, and lime juice.
  4. Assemble by placing a generous amount of the rice mixture in each bowl. Top with sliced chicken, avocado, shredded cheese, cilantro, and tortilla chips if desired.
  5. Serve immediately and enjoy!

Notes

Store leftovers in airtight containers for up to 3 days. Store toppings separately to maintain freshness.
