A delightful cherry pie that captures the essence of summer with its sweet and tart filling, all encased in a golden, flaky crust.

Ingredients

  • 2 cups fresh or frozen cherries
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 tablespoon butter
  • 1 package pie crusts (or homemade)
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix the cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract in a bowl.
  3. Roll out one pie crust and place it in a pie dish.
  4. Pour the cherry mixture into the prepared crust.
  5. Cover with the second pie crust and seal the edges.
  6. Create steam vents by cutting slits in the top crust.
  7. Brush the top crust with beaten egg.
  8. Bake for 30-35 minutes or until golden brown.
  9. Cool before serving.

Notes

Pair with vanilla ice cream or whipped cream for an extra treat. Store leftovers in the refrigerator for up to four days.
