A comforting breakfast dish combining crispy potatoes, fluffy scrambled eggs, and melted cheddar cheese.

Ingredients

  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup cooked ham or bacon (optional)
  • 2 tablespoons chopped green onions or chives
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Boil the potatoes in salted water until fork-tender for 10 to 15 minutes. Drain and set aside.
  2. Crisp the potatoes in a skillet with melted butter for 5 to 7 minutes until golden.
  3. Add ham or bacon (if using) and heat through for 2 to 3 minutes.
  4. Whisk eggs, milk, salt, and pepper until smooth in a bowl.
  5. Scramble the egg mixture with the potatoes, cooking gently for about 5 minutes until eggs are set.
  6. Add cheese on top, cover, and cook for 2 to 3 minutes until melted.
  7. Garnish with green onions or chives and serve warm.

Notes

For a vegetarian option, omit the ham or bacon. Customize with extra veggies or different cheeses as desired.
