Pepperoni Pizza Quesadillas

Delightful quesadillas that blend the comfort of pizza with crispy tortillas, perfect for quick meals or gathering with friends.

Ingredients

  • 8 count flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup sliced pepperoni
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Heat a large skillet over medium heat and brush one side of a tortilla with olive oil.
  2. Place the tortilla oil-side down in the skillet and spread 1 tablespoon of pizza sauce evenly on top.
  3. Sprinkle 1/4 cup of mozzarella, layer with pepperoni, add a pinch of Italian seasoning, Parmesan, and top with fresh basil.
  4. Top with a second tortilla and press gently with a spatula.
  5. Cook for 2 to 3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  6. Carefully flip the quesadilla and cook another 2 to 3 minutes until golden and crispy.
  7. Remove from the skillet, let rest for a minute, then slice into wedges and serve immediately.

Notes

These quesadillas can be customized with additional vegetables or different cheeses. Pair with a side salad or dipping sauces for extra flavor.
