Ingredients

Scale
  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons hot honey
  • 4 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon butter
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 jalapeño, seeded and chopped
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Combine sour cream, mayonnaise, jalapeño, lime juice, garlic, salt, and cayenne pepper to make the spicy jalapeño cream sauce. Stir well and refrigerate.
  2. Whisk together olive oil, chili powder, garlic powder, smoked paprika, salt, pepper, and hot honey. Add the chicken breasts and toss to coat. Let marinate for 10 minutes.
  3. Cook the marinated chicken in a skillet over medium-high heat for 6–7 minutes per side until cooked through and golden. Remove from heat and slice thinly.
  4. Reduce the heat to medium-low, wipe out the skillet and add butter to melt.
  5. Place one tortilla in the skillet, sprinkle half of the cheddar and Monterey Jack cheese over it, top with sliced chicken, and add the remaining cheese. Cover with a second tortilla.
  6. Cook for 2–3 minutes per side until the tortillas are golden and the cheese is melted, pressing gently with a spatula.
  7. Transfer the quesadilla to a cutting board, slice into wedges, and repeat with the remaining tortillas and filling. Serve hot with the spicy jalapeño cream sauce.

Notes

For extra flavor, consider adding fresh toppings like chopped cilantro or additional jalapeños.
