Cheesy Ground Beef and Rice Casserole

A comforting and hearty casserole packed with ground beef, fluffy rice, and creamy cheese, perfect for family dinners.

Ingredients

  • 1 1/2 pounds ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup milk or beef broth
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Sauté the beef and onions in a large skillet until browned and cooked through. Drain excess fat.
  2. Add the minced garlic and cook for an additional 30 seconds.
  3. Create the creamy sauce by whisking together the cream of mushroom soup, milk or beef broth, paprika, salt, and pepper in a bowl.
  4. Combine the cooked rice and half of the shredded cheese with the beef mixture, then pour in the creamy sauce and mix well.
  5. Transfer the mixture to a greased 9×13 casserole dish and top with the remaining shredded cheese.
  6. Bake covered at 350°F for 20 minutes, then uncover and bake for an additional 10 minutes, or until cheese is melted. Broil for 2 minutes for a crispy top if desired.

Notes

For extra flavor, consider adding sautéed mushrooms or bell peppers. Cheese lovers can substitute sharp cheddar with mozzarella or Monterey Jack.
