This delightful focaccia is packed with garlic and cheese, perfect as a starter or main dish.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm water
  • 2 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Prepare the dough: In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the activated yeast mixture along with the olive oil. Stir until a sticky dough forms.
  3. Knead: Transfer the dough to a floured surface. Knead for about 5-7 minutes until it becomes smooth and elastic.
  4. First rise: Place the dough back in the bowl, cover it, and let it rise in a warm place for about 30 minutes.
  5. Add garlic and cheese: Once risen, punch down the dough and incorporate the minced garlic, kneading it in. Fold in the mozzarella and half of the grated Parmesan.
  6. Shape the dough: Grease a baking tray with olive oil. Press the dough into the tray, making dimples all over the surface.
  7. Second rise: Cover the dough again and let it rise for another 20 minutes.
  8. Bake: Preheat the oven to 400°F (200°C). Sprinkle remaining Parmesan on top, drizzle with olive oil, and bake for 20-25 minutes or until golden brown.
  9. Cool and garnish: Let the focaccia cool slightly, then sprinkle with fresh parsley before cutting into pieces.

Notes

Can add herbs like rosemary or thyme for a twist. Store leftovers in an airtight container.
