A simple and delicious recipe for cheesy chicken enchiladas filled with shredded chicken, creamy cheese, and homemade enchilada sauce.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 8 pieces flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish, optional)

Instructions

  1. Gather your ingredients.
  2. Preheat the oven to 350°F (175°C).
  3. Mix the shredded chicken, ½ cup cheese, sour cream, cumin, garlic powder, salt, and pepper in a large bowl.
  4. Assemble the enchiladas by spreading enchilada sauce in a baking dish and rolling the chicken mixture in the tortillas.
  5. Cover the rolled enchiladas with the remaining sauce.
  6. Sprinkle the remaining cheese on top.
  7. Bake in the oven for about 25 minutes.
  8. Rest for a few minutes before serving.

Notes
