Comforting cheesy chicken enchiladas bring warmth and joy to any meal, perfect for family gatherings or weeknight dinners.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 8 pieces flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish, optional)

Instructions

  1. Gather your ingredients.
  2. Prepare the chicken mixture by combining the shredded chicken, half of the cheese, sour cream, cumin, garlic powder, and a pinch of salt and pepper.
  3. Warm the tortillas in the microwave or on a skillet for about 30 seconds.
  4. Assemble the enchiladas by spreading a small amount of enchilada sauce on the bottom of your baking dish and filling each tortilla with the chicken mixture.
  5. Pour the remaining enchilada sauce over the topped enchiladas.
  6. Sprinkle with the remaining cheese.
  7. Bake covered with foil in a preheated oven at 350°F (175°C) for 20 minutes, then remove foil and bake for an additional 10 minutes.
  8. Cool and garnish with fresh cilantro.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
