A comforting casserole combining cheesy tortellini, zesty enchilada sauce, and savory ground beef for a delightful family meal.

  • 16 ounces cheese tortellini
  • 1 pound lean ground beef
  • 16 ounces enchilada sauce
  • 2 cups shredded mozzarella cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bring a pot of salted water to a rolling boil. Add the cheese tortellini and cook according to package directions until al dente. Once cooked, drain the tortellini well and set them aside to let them cool slightly.
  3. In a large skillet over medium heat, add the lean ground beef. Cook it, breaking it apart with a spatula until it’s fully browned and no longer pink, about 6-8 minutes. Once cooked, drain off any excess grease.
  4. In a 9×13 inch oven-safe casserole dish, combine the cooked tortellini, browned ground beef, enchilada sauce, and 1 cup of the shredded mozzarella cheese. Toss everything gently to coat.
  5. Sprinkle the remaining 1 cup of mozzarella cheese evenly over the top of the casserole.
  6. Place your dish in the preheated oven. Bake for 20 to 30 minutes, or until the cheese is thoroughly melted, bubbly, and slightly golden on the edges.
  7. Once baked, remove the casserole from the oven and let it rest for a few minutes. Optionally, sprinkle freshly chopped parsley on top.
  8. Serve warm alongside your favorite sides and enjoy!

Notes

This dish can be made ahead of time and stored in the fridge for up to 24 hours before baking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
