Delicious and crispy vegetable rolls filled with gooey cheese and vibrant veggies, perfect for any occasion.

Ingredients

  • 1 cup mixed fresh vegetables (such as bell peppers, spinach, and zucchini)
  • 1 cup shredded cheese (such as mozzarella or cheddar)
  • 1 package of spring roll or pastry wrappers
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the chopped vegetables, shredded cheese, garlic powder, onion powder, salt, and pepper until well combined.
  3. Lay out one pastry wrapper and place a spoonful of the vegetable mixture at one end.
  4. Fold the sides over the filling and roll it up tightly.
  5. Repeat with remaining wrappers and filling.
  6. Brush each roll with olive oil.
  7. Place them on a baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
  8. Serve warm and enjoy!
