A warm, creamy side dish brimming with flavor, featuring sweet corn kernels in a rich, cheesy sauce with crispy bacon.

Ingredients

  • 6 slices bacon
  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  2. Chop the bacon into bite-sized pieces once cooled.
  3. Combine the chopped bacon, reserved bacon fat, corn, onion, garlic, butter, garlic powder, onion powder, salt, black pepper, and heavy cream in the slow cooker.
  4. Cover and let it cook on low for 2-3 hours, stirring halfway through.
  5. Add the shredded cheddar cheese about 30 minutes before serving.
  6. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
