A nutritious take on classic fried rice using cauliflower as the base, bursting with flavor and customizable with your favorite vegetables.

Ingredients

  • 1 head of cauliflower
  • 2 tablespoons of sesame oil
  • 1 cup of mixed vegetables (carrots, peas, bell peppers)
  • 2 green onions, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • Salt and pepper to taste
  • 2 eggs (optional)

Instructions

  1. Prep the cauliflower by removing leaves and stem, then cutting into florets. Pulse in a food processor until rice-like.
  2. Heat the sesame oil in a large skillet or wok over medium heat.
  3. Sauté the minced garlic for about 30 seconds until fragrant.
  4. Add the mixed vegetables and cook for 3-4 minutes until tender.
  5. Incorporate the cauliflower rice into the skillet and cook for 5-7 minutes until tender.
  6. Scramble the eggs (if using) on one side of the skillet until fully cooked.
  7. Season with soy sauce, salt, and pepper, mixing thoroughly.
  8. Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or skillet.
