A nutritious, low-carb alternative to fried rice, packed with flavor and vibrant mixed vegetables.

Ingredients

  • 1 head of cauliflower
  • 2 tablespoons oil (sesame or vegetable)
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • Green onions, chopped (for garnish)

Instructions

  1. Rice the cauliflower using a food processor or box grater.
  2. Heat the oil over medium heat in a large skillet or wok.
  3. Add the minced garlic and stir-fry for about 30 seconds.
  4. Toss in the riced cauliflower and mixed vegetables, cooking until softened.
  5. Push the mixture to one side and scramble the eggs on the other side until fully cooked.
  6. Stir everything together, then pour in soy sauce and mix well.
  7. Garnish with chopped green onions and serve hot.

Notes

Feel free to customize with seasonal vegetables or add some heat with jalapeños.
