Cauliflower Fried Rice

A healthier version of fried rice using cauliflower instead of traditional rice, packed with flavor and vibrant vegetables.

Ingredients

  • 1 head cauliflower
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs
  • 3 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Grate the head of cauliflower until it resembles rice.
  2. Heat the sesame oil in a large skillet over medium heat.
  3. Sauté the grated cauliflower and mixed vegetables for 5-7 minutes until tender.
  4. Push the vegetables to one side and scramble the eggs on the other side until fully cooked.
  5. Mix everything together and pour in the soy sauce, seasoning with salt and pepper.
  6. Garnish with sliced green onions before serving warm.

Notes

Use a food processor for quicker grating. Store leftovers in an airtight container for up to 3 days.
