  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional)
  • 1 cup raisins (optional)
  • Cream cheese or buttercream frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Beat together the sugar, vegetable oil, and eggs until creamy.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots and nuts and raisins if using.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool for 10 minutes before transferring to wire racks to cool completely.
  9. Frost with your choice of cream cheese or buttercream frosting and serve.
