Delightful bite-sized muffins capturing the essence of pizza, perfect for snacks or quick meals.

Ingredients

  • 1 cup almond flour
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cooked and crumbled sausage
  • 1/2 cup chopped pepperoni
  • 1/4 cup grated Parmesan cheese
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Mix the almond flour, mozzarella cheese, sausage, pepperoni, Parmesan cheese, baking powder, Italian seasoning, salt, and pepper in a large bowl.
  3. Whisk the eggs in another bowl until light and frothy.
  4. Pour the eggs into the dry ingredients and mix until well combined.
  5. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 15-20 minutes or until the tops are golden brown.
  7. Let cool slightly before removing from the tin and serve warm.

Notes

Serve warm with marinara sauce for dipping. Store leftovers in an airtight container for up to 5 days or freeze for up to 3 months.
