A delightful twist on a classic Italian dish, this luscious Caprese Cake features ground almonds and rich dark chocolate in every bite.

Ingredients

  • 1 cup ground almonds
  • 6 oz dark chocolate, chopped
  • 2 tablespoons cocoa powder
  • 4 large eggs, separated
  • 1/2 cup sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. Melt the dark chocolate and butter together in a double boiler or microwave, stirring until smooth.
  3. Whisk together the egg yolks and sugar until pale and creamy.
  4. Combine the melted chocolate mixture and vanilla extract to the egg yolk mixture, stirring until combined.
  5. Fold in the ground almonds and cocoa powder until fully incorporated.
  6. Beat the egg whites with a pinch of salt until stiff peaks form.
  7. Fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for about 30-35 minutes, or until set and a toothpick inserted into the center comes out slightly moist.
  10. Cool in the pan for 10 minutes, then invert onto a serving plate. Dust with powdered sugar if desired and serve.

Notes

For serving, pair with whipped cream, vanilla ice cream, or fresh berries. Store leftovers in an airtight container for up to three days at room temperature or a week in the fridge.
