1 pound Steak Tips (Sirloin or Ribeye), cut into bite-sized pieces
2 tablespoons Cajun Seasoning
12 ounces Rigatoni Pasta
1 cup Heavy Cream
1 cup Parmesan Cheese, freshly grated
3 cloves Garlic, minced
2 tablespoons Butter
1 tablespoon Olive Oil
Salt and Pepper, to taste
1 cup Mozzarella or Fontina Cheese, optional
Instructions
Start by patting the bite-sized steak tips dry with paper towels to remove any excess moisture. Season them generously with salt, pepper, and Cajun seasoning.
Add the olive oil and butter to a large skillet over medium-high heat. Once hot, add the seasoned steak tips in a single layer and sear for about 2-3 minutes on each side until golden brown. Remove and set aside.
Bring a large pot of salted water to boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
Pour in the heavy cream, stirring well to incorporate the garlic. Bring to a gentle simmer and reduce the heat. Gradually add Parmesan cheese, stirring until melted.
Add the drained rigatoni to the creamy sauce, tossing to coat. Add reserved pasta water if the sauce is too thick.
Fold in the seared steak tips, ensuring everything is combined. Taste and adjust seasoning if needed.
Sprinkle mozzarella or Fontina cheese over the top if using. Cover the skillet to melt.
Remove from heat, gently toss, and serve hot, garnished with fresh herbs if desired.
