A delicious one-pot pasta dish that combines the heartiness of chicken, the smokiness of BBQ, and a delightful Cajun kick, perfect for any weeknight meal.

  • 1 lb cooked chicken (shredded or diced)
  • 12 oz penne or rotini pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3/4 cup BBQ sauce
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1 tbsp olive oil
  • Chopped parsley (optional, for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the cooked chicken to the pot, seasoning with Cajun seasoning, garlic powder, salt, and pepper. Stir and cook for 2–3 minutes until heated through.
  3. Pour in the chicken broth, heavy cream, BBQ sauce, and uncooked pasta. Stir well to combine.
  4. Bring the mixture to a boil, then reduce heat to low and let simmer, cooking until the pasta is tender, about 10–12 minutes.
  5. Stir in the shredded cheddar cheese and cream cheese until fully melted and creamy.
  6. Serve warm, garnished with chopped parsley if desired.
