A healthier twist on classic Caesar dressing using Greek yogurt for a creamy texture without the extra calories.

Ingredients

  • 1 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 clove garlic, minced
  • 1 teaspoon anchovy paste (or 2 anchovy fillets, minced)
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 12 tablespoons water (optional, for thinning)

Instructions

  1. Combine the Greek yogurt and mayonnaise in a medium mixing bowl. Whisk until smooth and creamy.
  2. Add the Dijon mustard, red wine vinegar, and Worcestershire sauce. Whisk again to incorporate.
  3. Add the minced garlic and anchovy paste (or fillets). Stir until well combined.
  4. Gradually mix in the freshly grated Parmesan cheese, ensuring even distribution.
  5. Taste the dressing and season with salt and black pepper as needed.
  6. If desired, add water one tablespoon at a time to achieve a thinner consistency.
  7. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes.
  8. Serve over greens or as a dip for vegetables.

Notes

Store any leftover dressing in an airtight container in the refrigerator for up to one week. If it thickens, whisk in a little water.
