Crispy, golden egg rolls filled with spicy buffalo chicken, perfect for game day appetizers or a satisfying snack.

  • 1 cup cooked and shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup green onions, chopped
  • Egg roll wrappers
  • Cooking spray or oil for spraying

Instructions

  1. Combine the filling: In a bowl, combine the shredded chicken, buffalo sauce, cheese, and green onions. Mix well until all ingredients are nicely blended.
  2. Prepare the wrapper: Lay an egg roll wrapper on a flat surface with a corner facing you.
  3. Fill the wrapper: Place a small amount of the chicken mixture in the center of the wrapper, being careful not to overfill.
  4. Fold and roll: Fold the bottom corner over the filling, then fold the sides in neatly. Roll up tightly, ensuring the filling is secure.
  5. Repeat the process with the remaining wrappers and filling until you’ve made all the egg rolls.
  6. Preheat the air fryer to 370°F (187°C).
  7. Spray for crispiness: Spray the egg rolls lightly with cooking spray.
  8. Air fry to perfection: Carefully place the rolls in the air fryer basket and cook for 10-12 minutes or until golden brown and crispy.
  9. Serve warm with additional buffalo sauce for dipping. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer to maintain crispiness.
