A delicious chicken bake topped with fresh bruschetta ingredients, melted mozzarella, and bursting with flavor.

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups cherry tomatoes, halved
  • 1/3 cup red onion, finely chopped
  • 1/3 cup fresh basil, chopped
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F. Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Place the chicken breasts in the prepared baking dish. In a small bowl, whisk together olive oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper. Pour this mixture over the chicken and turn to coat evenly.
  3. Bake the chicken for 22 to 28 minutes or until it reaches an internal temperature of 165°F.
  4. While the chicken is baking, toss cherry tomatoes, red onion, and basil in a bowl. Season with a pinch of salt.
  5. Top the cooked chicken with mozzarella cheese and the bruschetta topping. Return to the oven for 3 to 5 minutes until the cheese is melted.
  6. Allow the dish to rest for 5 minutes before serving.

Notes

Serve with garlic bread or a simple arugula salad. Leftovers can be stored in an airtight container for up to 3 days.
