Delicious and customizable breakfast burritos filled with eggs, cheese, and your choice of meat and veggies.

Ingredients

  • 4 large flour tortillas
  • 6 eggs
  • 1/2 cup shredded cheese
  • 1/2 cup cooked and crumbled sausage or bacon
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Salsa (optional)

Instructions

  1. Sauté the veggies in a large skillet until softened, about 5 minutes.
  2. Whisk the eggs together with salt and pepper in a bowl.
  3. Pour the egg mixture into the skillet and cook until scrambled, stirring gently.
  4. Add the cooked sausage or bacon along with the shredded cheese, stirring until melted.
  5. Fill each tortilla with a portion of the egg mixture, fold in the sides, and roll them up.
  6. Serve warm, optionally with salsa on the side.

Notes

You can customize the filling with different vegetables or meats as desired.
