Blueberry Swirl Yogurt Bites

These yogurt bites capture the joy of fresh blueberries swirled into creamy yogurt, perfect for snacking or as a refreshing dessert.

Ingredients

  • 1 cup fresh or frozen blueberries
  • 2 tablespoons granulated sugar or honey
  • 1 tablespoon water
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cornstarch mixed with 1 tablespoon cold water (optional)
  • 2 cups Greek yogurt (plain or vanilla)
  • 2–3 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract (omit if using vanilla yogurt)
  • 1 small pinch fine sea salt
  • 1/2 cup granola or crushed digestive biscuits (optional)
  • 2 tablespoons finely chopped nuts (optional)
  • 1–2 tablespoons shredded coconut (optional)
  • Nonstick cooking spray or neutral oil for greasing molds

Instructions

  1. Prepare the Blueberry Swirl: In a small saucepan, combine blueberries, sugar or honey, and water. Set over medium heat and cook until the berries begin to burst, about 5–7 minutes. Mash some of the berries and stir in lemon juice. If thicker swirl is desired, add cornstarch slurry and cook until thickened. Let cool.
  2. Prepare the Yogurt Base: In a mixing bowl, add Greek yogurt, then stir in honey or maple syrup, vanilla (if using plain yogurt), and salt. Whisk until smooth.
  3. Prepare the Molds: Place silicone molds on a baking sheet for stability. Grease the molds with nonstick spray or oil.
  4. Create the Optional Crunchy Base: In a bowl, mix granola, crushed biscuits, nuts, and coconut if desired. Drizzle with coconut oil or butter, then press into the bottom of each mold.
  5. Swirl the Blueberry into the Yogurt: Ensure blueberry sauce is cooled. Add half of the sauce to the yogurt and gently fold in to create swirls. Reserve the remaining sauce.
  6. Fill the Molds: Spoon swirled yogurt into each mold, add dollops of reserved blueberry sauce on top, and press extra toppings if desired.
  7. Freeze the Yogurt Bites: Freeze until firm, about 3–4 hours. For the best texture, freeze overnight.
  8. Serve: Let yogurt bites sit at room temperature for 3–5 minutes before serving. Enjoy with fresh fruits or a dollop of nut butter.

Notes

These yogurt bites can be stored in the freezer for up to 2–3 weeks. Allow to unfreeze slightly before serving for a softer texture.
