A simple yet elegant blueberry galette that captures the essence of summer with juicy blueberries and a flaky crust.

  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 sheet pie dough (store-bought or homemade)
  • 1 egg (for egg wash)
  • 1 tablespoon butter (for dotting)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix the fresh blueberries with granulated sugar, lemon juice, cornstarch, and salt.
  3. Roll out the pie dough into a circle, about 12 inches in diameter.
  4. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  5. Spoon the blueberry mixture onto the center of the dough, leaving about a 2-inch border.
  6. Fold the edges of the dough over the blueberries, crimping to secure.
  7. Brush the edges of the dough with egg wash and sprinkle with coarse sugar.
  8. Dot the blueberries with small pieces of butter.
  9. Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
  10. Let the galette cool slightly before slicing.

Notes

For best results, serve warm with ice cream or chilled for breakfast.
