A delightful bread combining fresh blueberries and creamy cheese, perfect for breakfast or an afternoon snack.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, and then stir in the milk and vanilla extract.
  5. Gradually add the flour mixture into the wet ingredients, mixing until just combined.
  6. Mash the cream cheese with a fork until smooth.
  7. Fold in the mashed cream cheese and fresh blueberries until evenly distributed.
  8. Transfer the batter into the prepared loaf pan and spread it evenly.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.
  11. Slice and serve the Blueberry Cream Cheese Bread.
