A nutritious breakfast bake packed with protein from cottage cheese and fiber from oats, sweetened with honey and fresh blueberries.

  • 1 1/2 cups cottage cheese
  • 1 1/2 cups rolled oats
  • 1/2 cup milk
  • 1/4 cup honey
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish with butter or cooking spray.
  3. In a large mixing bowl, combine the cottage cheese, rolled oats, milk, honey, baking powder, cinnamon, and salt.
  4. Whisk the mixture together until it is smooth and well combined.
  5. Crack the eggs into the bowl, then add the vanilla extract.
  6. Beat the eggs into the mixture until everything is thoroughly incorporated.
  7. Gently fold in the fresh blueberries, being careful not to crush them.
  8. Pour the mixture into the prepared baking dish, spreading it out evenly.
  9. Dot the top of the mixture with small pieces of butter, evenly distributing them across the surface.
  10. Place the baking dish in the preheated oven and bake for about 35 to 40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  11. Once baked, remove the dish from the oven and allow it to cool for about 5 minutes before slicing and serving.

Notes

Serve warm, optionally drizzled with honey or topped with yogurt. Store leftovers in the refrigerator for 3-4 days or freeze individual pieces.
