  • 1 lb Pork Tenderloin
  • 1 cup Fresh Blackberries
  • 1/4 cup Balsamic Vinegar
  • 2 tbsp Honey
  • 1 tbsp Dijon Mustard
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Rosemary
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive Oil
  • 2 cups Roasted Brussels Sprouts
  • 4 servings Garlic Mashed Potatoes
  • 1 large Fresh Spinach Salad, topped with goat cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sear the pork tenderloin in olive oil for about 3-4 minutes on each side until golden brown.
  3. Create the glaze by sautéing garlic and combining it with blackberries, balsamic vinegar, honey, Dijon mustard, and rosemary.
  4. Glaze the pork with the blackberry mixture and roast in the oven for 15-20 minutes.
  5. Roast the Brussels sprouts on a baking sheet with olive oil and seasoning for about 20 minutes.
  6. Make garlic mashed potatoes by boiling and mashing the potatoes with butter, cream, and roasted garlic.
  7. Assemble a fresh spinach salad with goat cheese and vinaigrette.
  8. Plate the dish and serve.

Notes

Allow the pork to rest before slicing for better juiciness. Adjust the glaze according to taste preferences.
