Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 jar morello cherries (with juice)
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the flour, sugar, cocoa, baking powder, baking soda, and salt until well combined.
  3. Add the eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes until smooth.
  4. Stir in the boiling water (the batter will be thin) and pour evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool for 10 minutes in the pans, then remove to wire racks to cool completely.
  7. Whip the heavy cream with powdered sugar until stiff peaks form, creating a cloud of creamy goodness.
  8. Slice each cake in half horizontally. Place one layer on a serving plate, spread with whipped cream and sliced cherries, and continue layering.
  9. Frost the top and sides of the cake with the remaining whipped cream and garnish with chocolate shavings and additional cherries.
  10. Slice into generous pieces and serve the joy to your loved ones!
