  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Taco shells
  • Toppings: diced tomatoes, lettuce, cheese, avocado, salsa

Instructions

  1. Heat the oil in a skillet over medium heat until shimmering.
  2. Sauté the diced onion until translucent, about 3-4 minutes.
  3. Mix in minced garlic, cumin, chili powder, salt, and pepper. Cook for another minute until fragrant.
  4. Add the black beans and cook until heated through.
