Delightful blondies infused with Biscoff cookie butter, delivering a melt-in-your-mouth experience with a caramelized sweetness.

  • 1 cup Biscoff cookie butter
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: additional Biscoff cookie butter for swirls

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Mix the melted butter and Biscoff cookie butter until smooth.
  3. Add brown sugar and granulated sugar; mix until well combined.
  4. Beat in the eggs, one at a time, along with the vanilla extract.
  5. Whisk together the flour, baking powder, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour the batter into the prepared baking dish and smooth out the top.
  8. Add dollops of additional cookie butter on top and swirl with a knife.
  9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before cutting into squares and serving.

Notes

These blondies pair beautifully with vanilla ice cream or chocolate sauce. Store in an airtight container for up to 3 days.
