A delightful blend of coffee, chocolate, and creamy goodness, this Tiramisu Cake is perfect for gatherings or a sweet treat.

Ingredients

  • 2 cups cake flour (can substitute with all-purpose flour if needed)
  • 1 tbsp baking powder
  • 1 cup unsalted butter (at room temperature)
  • 1 cup sugar
  • 2 tsp vanilla extract
  • 4 large eggs
  • 1 cup whole milk
  • 2 tbsp instant espresso powder
  • 1 cup boiling water
  • 1 cup mascarpone cheese
  • 2 cups powdered sugar
  • 1 cup heavy whipping cream
  • 1 cup liquor or strong coffee
  • 1 tbsp cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine dry ingredients by whisking the cake flour and baking powder.
  3. Cream together the unsalted butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Incorporate the whole milk, mixing gently until combined.
  6. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  7. Dissolve the instant espresso powder in the boiling water.
  8. Combine the espresso mixture with your cake batter.
  9. Pour the batter into a prepared cake pan and bake for 25-30 minutes.
  10. Cool the cake in the pan for 10 minutes before transferring it to a wire rack.
  11. Make the mascarpone frosting by blending mascarpone cheese and powdered sugar, then folding whipped cream into the mixture.
  12. Assemble the cake by cutting into layers and brushing each with liquor or coffee.
  13. Frost between each layer with mascarpone frosting and smooth the top and sides.
  14. Garnish with cocoa powder and let chill in the fridge for at least an hour before serving.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to a month.
