Perfectly roasted mini potatoes with a crispy exterior and fluffy inside, seasoned with garlic and herbs.

  • 1 1/2 pound mini potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper or lightly grease it.
  2. Wash and dry the mini potatoes thoroughly, cutting larger ones in half.
  3. Toss the potatoes with the olive oil, garlic powder, onion powder, dried rosemary, salt, and black pepper.
  4. Spread the seasoned mini potatoes in a single layer on the prepared baking sheet.
  5. Roast for 25-30 minutes, tossing halfway through, until golden brown and crispy.
  6. Garnish with fresh parsley and serve hot.

Notes

Don’t crowd the pan for even roasting. Feel free to experiment with other seasonings.
