Tender beef short ribs coated in a rich maple bourbon glaze, perfect for a cozy gathering.

  • 3 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 4 cloves garlic, minced
  • 3/4 cup bourbon
  • 1/2 cup maple syrup
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons dried thyme
  • Salt and black pepper, to taste
  • 2/3 cup maple syrup (for glaze)
  • 2 tablespoons Worcestershire sauce (for glaze)
  • Salt and black pepper, to taste (for glaze)

Instructions

  1. Season the short ribs with salt and black pepper, ensuring they’re well-coated.
  2. Heat olive oil in a large, oven-safe pot over medium-high heat and sear the ribs on all sides until caramelized.
  3. Add the diced onion and cook for 5 to 6 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Pour in the bourbon and maple syrup, scraping up any browned bits, and simmer for 3 to 4 minutes.
  6. Stir in the beef broth, tomato paste, Worcestershire sauce, and dried thyme until combined.
  7. Return the seared short ribs to the pot.
  8. Braise in a preheated 325°F oven for 2 1/2 to 3 hours, until tender.
  9. Combine maple syrup and Worcestershire sauce in a saucepan and cook until thickened for the glaze.
  10. Remove the pot from the oven, allow to rest, then spoon the glaze over the ribs and serve.

Notes

Pair with mashed potatoes, a green salad, or roasted vegetables. Can be made ahead of time and reheated.
