Deliciously tender short ribs glazed with a sweet maple and bourbon sauce, perfect for cozy family gatherings.

  • 3 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 4 cloves garlic, minced
  • 3/4 cup bourbon
  • 1/2 cup maple syrup
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons dried thyme
  • Salt and black pepper, to taste
  • 2/3 cup maple syrup (for glaze)
  • 2 tablespoons Worcestershire sauce (for glaze)
  • Salt and black pepper, to taste (for glaze)

Instructions

  1. Season the beef short ribs generously with salt and black pepper.
  2. Sear the ribs in a large pot with olive oil over medium-high heat until golden-brown, about 7-9 minutes.
  3. Sauté the diced onion in the same pot until softened, then add minced garlic and cook for an additional minute.
  4. Pour in the bourbon and maple syrup, scraping up browned bits, and simmer for 3-4 minutes.
  5. Stir in beef broth, tomato paste, Worcestershire sauce, and dried thyme.
  6. Return the seared short ribs to the pot and cover. Transfer to a preheated oven at 325°F (163°C) and braise for 2.5 to 3 hours.
  7. Combine maple syrup and Worcestershire sauce for the glaze in a small saucepan, boil, and let thicken for about 5 minutes.
  8. Remove the pot from the oven and let the ribs rest. Spoon the glaze over each rib before serving.

Notes

Serve over creamy mashed potatoes or with roasted seasonal vegetables. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
