A comforting one-pot meal featuring chicken, broccoli, and orzo pasta, topped with Parmesan cheese.

  • 2 cups orzo pasta
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Start by cooking the orzo according to the package instructions.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  3. Add the diced chicken to the skillet and cook until it’s no longer pink—about 5-7 minutes.
  4. Stir in 3 cloves of minced garlic and cook for another minute.
  5. Now, add the broccoli florets and chicken broth, cover, and simmer for about 5 minutes.
  6. Once your orzo is cooked and drained, combine it with the chicken and broccoli mixture.
  7. Stir in 1/2 cup of grated Parmesan cheese, season with salt and pepper, and allow it to melt.
