A comforting Beef Enchilada Casserole with layers of savory ground beef, zesty enchilada sauce, and gooey cheddar cheese.

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 ounces red enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add diced onion to the skillet and cook until softened, about 3 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add ground beef to the skillet and cook until browned, breaking up the meat with a spoon.
  6. Sprinkle chili powder, cumin, salt, and black pepper over the beef. Stir to combine.
  7. Pour half of the enchilada sauce into the beef mixture and let it simmer for 2 minutes.
  8. Spread a thin layer of the remaining enchilada sauce on the bottom of a 9×13 inch baking dish.
  9. Arrange four tortillas in the dish, tearing them if necessary to fit perfectly.
  10. Spoon half of the beef mixture over the tortillas and sprinkle with 1 cup of cheese.
  11. Repeat with the remaining tortillas, beef mixture, and cheese.
  12. Pour the remaining enchilada sauce over the top, ensuring it covers evenly.
  13. Bake uncovered for 20 minutes, or until the cheese is melted and bubbly.
  14. Allow the casserole to stand for 5 minutes before slicing and serving.

Notes

For added flavor, consider using a blend of beef and chorizo. Cover leftovers tightly and refrigerate for up to 3 days.
