BBQ Chicken Sweet Potato Skillet

A comforting skillet dish combining BBQ chicken, sweet potatoes, and melted cheese for a hearty meal.

Ingredients

  • 2 large sweet potatoes, diced
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onions and minced garlic to the skillet and sauté until soft and fragrant, around 3-4 minutes.
  3. Toss in the diced sweet potatoes and cook for about 10 minutes, stirring occasionally.
  4. Push the sweet potatoes to one side of the skillet and add the diced chicken, seasoning with salt and pepper.
  5. Cook the chicken until browned, about 5-7 minutes.
  6. Pour BBQ sauce over the chicken and sweet potatoes and mix everything to combine.
  7. Reduce the heat and sprinkle cheese on top, covering to simmer until cheese is melted and sweet potatoes are tender, about 5 more minutes.
  8. Garnish with chopped green onions if desired and serve warm.

Cut sweet potatoes evenly for consistent cooking and feel free to customize the BBQ sauce to your preference.
